Just switched from Mail.app to Mailmate on both Big Sur and Catalina yesterday and think I'm in almost-heaven......
 
I am using Spark but as somebody who loves FireFox as a browser I am debating the move to Thunderbird for mail.
 
Sparrow's development being stopped left a hole in my heart, but Mimestream is the first macOS mail client that's made me really happy again. It is Gmail only, which is a bit of a bummer, but it's been extremely solid and fast in beta.

I'm not sure what the monetization path for it will be but I'd be happy to pay for it once it releases.

Mimestream looks really interesting. I'll defiantly check it out. Thanks.

It's remarkable how speedy of a client it is, considering that all interactions are negotiated over Gmail's API. The experience feels so performant and native. You can hardly tell the difference that it's not Apple Mail.

I will happily pay for Mimestream once it reaches v1.0. It also doesn't hurt that the developer is very active and is constantly releasing updates on a weekly basis.

Sounds promising, but the "gmail only" is a non-starter for me... iCloud mail and email from my internet provider is required for me...

I use Apple Mail for maybe 99% of my e-mail. I only use Outlook Web Access (OWA) sparingly, usually when Exchange 365 is having a hairball or I need to delay a delivery on an e-mail.
 
For many companies it's forbidden to use Zoom. I don't know what your problem is anyways.

And yet my neurologist uses it for telehealth out of one of the biggest university medical clinics in the US that is known for specialty care and being a "mini-Mayo Clinic". So if they are using it for PHI with HIPAA on their backs, there probably isn't much argument to be about about the security or privacy of Zoom. Zoom is fine, there just is a lot of FUD.

Google Meet and Skype and the like have a long way to go to be as good as Zoom is for video calls or conferences.
 
I use both Apple Mail and MS Outlook 365 clients.

Unfortunately, the Mac MS Outlook client is a "crippleware" version of the Windows client. For instance, there is no Outlook Developer tab and Outlook VBA does not exist like it does for Word and Excel Mac versions. Many other features were not ported as well. MS really prefers you to use Windows.

For iOS push notifications (presumably you want to use the same email client on macOS and iOS). A lot of these apps also store your credentials on their server too. Every couple of years there will be some buzz about a new email client (Spark, Airmail, Edison etc) but I trust Apple a lot more than some random third party for something as important as email.
 
Mac Mail app on MacOS, Mail app on iOS. Have used iCloud as my primary business account and all works very well.
 
Stock Mail app for personal email, and Outlook for Mac, for work emails.
I do not like to merge/mix personal and work emails. Too easy to end up sending from the wrong address...
 
Mail.app because I don't like my emails going through another developer's server.
Just be aware that your mail is not encrypted while residing on iCloud server.

 
I use Thunderbird on two Macs and an iPad. It seems to work OK. It's free if that's a factor.
 
Am I missing something here? Why do people insist on using an email client at all? I'm really curious.. unless it's for work, what's the point?

Because some people want features that the stock app doesn't offer. Other people dislike the syncing inconsistency (at times) of the stock app and generally prefer Gmail (yuck) app to the stock app etc.

No different than you getting a different model and color of a car than someone else.
