First of all, if you buy a 256Gb and fill it up with 256Gb, you need to buy a bigger one (which isn't available).
Second if you only get 20MBPS you have a faulty AP, a whole lot of interference and/or need to start using 802.11AC at 5GHz.
Third, if you fill it up with say 128Gb, it will take a bit over an hour to get that onto the iPad Pro, after that what is the problem? Adding 20Gb costs me almost no time. A little speed test gets me well over 500Mbps on the Internet and in my local network even much better.
Fourth point, if the USB3 controller is your only problem, tell me how much of the time is your iPad connected to a USB port? 1% of the time?
Last point, it usually useless to sell the current generation for the next generation iDevice unless there is a really good reason. With the iPad Pro 9.7 there are several reasons: Pencil, smart connector/keyboard, 256Gb or the new display.
If all of these don't convince you because of a USB 2 controller, then just buy another Air 2.

Who is going to fill 256gb all at once however you look at it.
I probably would. Maybe not quite 256GB but around 150GB on initial loading. I don't actually use USB, I use wifi. I just leave the device plugged in to the charger and have it sync overnight. With 256GB of local storage, the pain of transferring content is actually minimized since I don't have to keep deleting old content and adding new content often. Should be convenient for daily use and during long car and/or plane rides. Would it have been better if it had USB3? Sure. However, buying a smaller capacity would be more annoying since then, I'd have to deal with the slow transfer rates more often.

I also have a laptop running Plex Media Server with 2TB internal HDD and a 2.5" 4TB USB3 HDD but it's not quite as easy as the iPad to whip out while in the car or plane. More often than not, the laptop is in the backpack inside the overhead bins. Meanwhile, the 9.7" iPad easily fits in my purse or in the pouch for magazines in airline seats.

1. My issue is not with size. It's with speed. I would be more than happy with 256 GB
2. No faulty AP. Read my previous reply. I used 2 different ac routers. I connected non ac clients to 2.4 Ghz and ac clients are connected to 5 ghz. Speed never went over 20 mbps no matter what.
3. Again there is no problem with filling or not filling the iPad. It is a transfer speed problem. You are just repeating your point in a fancy packaging.
4. That 1% of time it has caused frustrations.
5. That last point is not the area of discussion of this topic.
