Having a complete sapphire screen is a terrible idea
Yes it would be incredibly scratch resistant, but sapphire is a lot more brittle than the current glass. At the same thickness you’d have lots of people shattering their screens. To combat this it would need to be like 5mm thick and that means a much thicker phone
It works on the small screen watches but on a phone the screen is much bigger and much more easy to shatter
You need not worry as even $2k will not get us an iPhone ultra with a sapphire screen.

Absolutely not. Maybe $1400 Max, even then it will need to fold. Current iPhone design aesthetics are a bit dated.

Just because in 5-6 years even best of the best fade versus cheaper new base models. Lots of people bought 12PM because it was separated by a camera - base iphone 13 inherited camera directly from 12PM.
13PM again had better camera than 13P - Iphone 14 has the same camera from 13PM.
Iphone 12 lived 5-7 hrs from battery, now iphone 13 mini does the same, while 13 pushes further up to 9 hrs.
The same works in Macs - $50K Mac pros on intel are now losing to $800 mac minis. There is no need to buy a phone for 5-6 years by opting for the best - bests will fade away really fast.
If person just tends to hold any of their phones for 5-6 years, then that is another story.

Their is no difference at all between the iPhone 13 Pro and Pro Max cameras, they are both exactly the same cameras and features.

No I would not pay that, because a sapphire glass screen would be a disaster for one, sapphire can smash easily, it's more resistant to scratches but less so to shattering. So a piece that large would not be beneficial.
Anyway I wouldn't pay that much for a phone, it would need to be a folding iPhone minimum to cost that much. With an Apple M chip in it too. Then it would be worth thinking about, but personally I wouldn't spend that much on a phone.
I just got a 13 Pro for a bargain price so I'm wouldn't be the target audience anyway.

For what I paid for my last few iPhones they should have sapphire standard, at minimum on the pro models, but for a phone I prefer SS to Ti
