Somehow I really don't think App Switching in the form of Multitasking on iOS devices is solely restricted performance due to RAM.

Was the storage on each device the same during your application multitasking tests? (non 4K video exporting)

Which applications and size of working files?

I am not sure what you mean here, but I do think ram plays a factor in multitasking considering it is limited depending on the amount of ram a device has.

The data the app has and available to the user is paused at stored into local storage is it not? That's why I think it's not directly related to RAM since Apple had working switching for a long while before the need to jump to 2GB of Ram.

I am not exactly sure. I honestly think that whether or not it's directly attributed to the performance/functionality of the multitasking, it's irrelevant. It is what Apple has used to create advantages on their higher priced products.
 
It sure looks tempting. But does a less than 1" improvement matter ? Or are you considering waiting for next years 10.7" Pro with OLED Display when Apple takes away the Home Button and has all that Extra Space. ?

Apple is Extremely Market savvy and the 10.5" Pro looks amazing. But how outdated will it
Be when next years model has a seemless no Button look.

I'll admit I am tempted but there's nothing the 10.5" can do that the 9.7" Pro can not do that I know off.

I initially bought the 10.5 but couldn't stomach what I paid for it, 256GB for $720+tax. That's just way too much money to spend on a tablet in my opinion. So I took it back and got the 128GB 9.7 Pro for $499+tax. Ahhh, blessed relief. I can finally sleep at night. My 9.7 Pro is fast, it's got a great screen, and it's the perfect size for me. I absolutely love it! It's not as snappy as the 10.5 was, but after using it for a day, I've forgotten all about the 10.5. But if I win the lottery, maybe my memory will come back...

I know money is money, but you didn’t feel that $250 was a worthy upgrade over the life of the device? I’m a bit loose with the wallet when it comes to gadgets, but I’d think $250 easily covers promotion, the increase in size, new design, and ram. Just me?
