Once your phone ships you should be given a tracking number. If you track it using UPS it will give you a departure scan when it is scanned while being loaded on a plane. Then you get on flight aware and find the plane that closely matches your departure scan and location and watch it cross the ocean. Then when it’s gets to Alaska you get to do it all over again.
There is also a post earlier in this thread that I copy and pasted on my notes for reference. I don’t remember who posted it originally but it has all then pertinent information.

It's that time of year again! I have gathered together a bunch of useful info for tracking your iPhone order (if you order it through Apple), perhaps the mods can sticky this, as I think people will find it helpful and it may help prevent duplicate question threads.
So, order date is in a few hours, 12:01am Pacific time on the 14th. Delivery date is the 21st.
This same info will work for those of you holding out for the iPhone XR later on!
Once our orders move to processing we should start seeing some movement to 'preparing for shipment' over the weekend.
Once this happens you should be able to get details on your phone and let the tracking begin!
Here are some notes to help track orders:
If your phone status has changed to "Shipped", you can view the invoice on the Apple site.
That invoice has the serial number on it.
Go to Apple.com, then pick the ORDERS page (the little "shopping bag" icon at the far right on the home page... go to your orders page). Now, log in, and find your iPhone order... and click on Print All Invoices to see your shiny new iPhone serial number.
You can look up the week of manufacture and factory here, using the serial number:

If your phone number isn’t working for UPS tracking, use your order number but subtract the last two numbers/letters. Say your order number is: W123456789, you'd put in: W1234567 - make sure to use the tracking by reference feature.

When you see the time that your flight leaves China (make sure that the UPS or FedEx info is showing it per China time, or do the math), and you can usually narrow it down

When I first ordered the Xs Max (Space Gray 64GB T-Mobile) it showed a delivery date for Oct 5-12. Then I noticed a whole like 12+ hours later if you still went to order one the dates moved up, and mine eventually changed for the 28th-Oct 5th. I really hope Apple just ends up pushing a whole bunch out for launch day, even ones that are said to be coming later.
When I preordered my 7 Plus it told me a very very late Oct date but it ended up coming Sept 28! Although not launch day, it was almost a whole month early.
Currently my Xs Max is still in "Order Processing", but I won't expect any changes for a while since it seems I'm behind a lot of other people right now LOL.

My XS Max went into preparing to ship overnight! Woo!
Yeah, looking at last year, tracking info started showing up on Sunday and Monday depending on the group.
Will I have any updates on shipping since I selected in store pickup? Don't figure I would but?
Yes but my phone last year got caught in the typhoon on Taiwan lots went north but mine was in batch delayed because of stopover there. Still made it in time for opening though ;-)
It's also possible to find your tracking number proactively/preemptively before Apple tells you, at least if you ordered through Apple.com or an iOS app.
Go to UPS or FedEx and look for Track by Reference. Historically, there are several items that will serve as the "reference number" ... the full phone number associated with your Apple Store account, and in some cases, the first EIGHT characters of the Apple order number will also work...
Once you have that info and Track by Reference, you should see the shipping info and get a tracking number...
From that point, it's just a matter of matching the timestamps on the tracking details against UPS or FedEx planes flight info on FlightAware.com.
Anyone seeing extra CC charges today? Ordered two IUP phones and AW4, have the charges for the AW (everything in one including AC+), and the phone charges for the taxes, all as expected and as they have been doing recently (taxes not rolled into Citizens anymore).
Then got an extra $81.xx charge this AM and I have no idea what for. No other accessories ordered, nothing I can think of. I wish Apple shipped invoices ahead of charging. If this was back there somewhere, sorry, I can't read 42 pages.

Pending charge for full amount of iPhone. Same behavior when I buy something at store. Pending charge for a couple days then charge posts. Went preparing for shipment late last night.

As I said, I have charges already for the (precise amounts for the) taxes for both phones. It's not the tax.
Probably not. Usually they leave from ZhengZou. Also, if they are about to leave in an hour, you should be able to find the tracking info. I don’t suspect we’ll see tracking updates until tomorrow.
