I know it was updated with phone verification recently but that was for sending money, no mention of Apple Pay. Has there been another update?

They mention to make sure your mobile number is up-to-date for a further update. They'll be talking about the verification text that then send you for Apple Pay.

Just used  pay on my watch at McDonald's. Really simple and easy to use. Faultless really...

First Direct and Natwest won't work for me, I've changed the region and reset both phone and watch.

Screw it, I'm joining Santander now!
Santander now working for me, it just says card not added, contact your carrier.

I've got a 5s and Watch - don't I add on phone and use on watch?
Nope. Go to the watch app and change region. Then kill the app. Go back in and add your card to passbook and apple pay. Change region back if it works

It seems to recognise my card details as a NatWest debit card, and displays a terms & conditions agreement that says the terms of my "NatWest current account govern the use of the card in Apple Pay". But then errors out with a "contact card issuer" message in the final step after clicking "agree".

The Daily Mail are claiming July 14th (next Tuesday) as the launch date:

just got a text message from Santander asking me to ring them as my card has not been successfully added to apple pay.. I called them up and gave the usual line about it being available some time in July. Congrats to the lucky few!

You don't need to kill the app, I've been checking it a few times over the last week and the option appears straight after changing my watch region.
