Weird, my tracking still shows the HK scans maybe because it passed customs in HK before it got to TW.
To all the fellow seasoned flight investigators, if my MacBook is in Shanghai today, when can I expect it to board a plane?
The website I used to track UPS flights (5X) is showing no outbound flights from Shanghai in the next 7 days.

I am tracking out of Shanghai too. There was a big issue with Shanghai shipping a few weeks, ago, but once it showed the "Package is delayed in transit" message, it was about 24 hours, before it departed. Hopefully, they fixed all of the logistics issues in Shanghai.
Most of the flights from Shanghai make their way to Anchorage for US deliveries, this may be the case for CA too. For example by my estimation my MBP is on this flight:

Based on your UPS tracking info, you can estimate what flight your package is on and follow it from there.
I noticed my status moved to “Your order is being prepared for shipment” today. Same delivery window (Dec 7-14). My Apple ID balance has been charged.
It finally looks like my saga is ending today.
11/11: Ordered 16/512 MBP, Space Gray
11/18: 'Shipment on it's way', estimated delivery 11/30
11/27: Another 'Processing order' email (but curiously same order number from 11/11)
11/28: 'Shipment not delivered by carrier' email, shipping replacement coming
12/03: 'Shipment on it's way', estimated delivery 12/21
12/09: Out for delivery by UPS
I posted awhile back that in a call with Apple Support my unit obviously had some shipping issues and instead of trying to reroute it a new unit was being assigned to me as that would be faster. I followed up on another posters suggestion of grabbing the serial number from the UPS notes, and it has in fact changed from my first tracking number to the second. So, I guess I am getting a different unit that was originally headed my way.
The first tracking number was active until 12/05, making it's way to Louisville with the status 'released by customs' and no updates since.
Very bizarre process and order of operations, but just glad the unit is local and out for delivery. For what it's worth, the Apple Store app shows two orders, one marked as 'delivered' and the other a 12/22 delivery date. ¯\_(ツ)_/¯

MacBook Air, Dec 11 is the end of the window. No charges beyond initial pre auth when I ordered. Store App says processing. No tracking I can find.

My MBA SG 16/1 was extended a month two days before the end of my original delivery window on the 7th of December.
UPDATE:
Order is shipped 12/9 from Shanghai.
The package is delayed in transit.
The delivery window on the Apple website is changed to Dec. 21.
For anyone with a UPS tracking code you can view all the details of your shipment in the developer tools console.
Works best in Firefox but works in other browsers too.
Go to your UPS tracking details page and open the developer tools console - CTRL + Shift + K.
Refresh the page.
You will see an expandable JSON Object listed in the output of the console.
You can expand it then expand "trackDetails", expand "0", then scroll down and expand "shipmentProgressActivities".
You will find a list of all the events associated with your package and can further expand more details on each event.
You can also view a plethora of other information regarding your shipment in the JSON object.

Curious what you're using to track? The UPS site is really sparse compared to my Deliveries.app – which in turn is less detailed than your screenshot. ;D
How is apple currently doing on actual ship times vs the estimate when you order? I have one that says Dec31-6.. When I previously purchased, I ended up receiving it about a week ahead of their estimate.
