Do you plan on ordering the new Apple Watch Series 7 (2021) this September?

From past experience, your latest backup will only appear if watchOS version is the same or lower than the watch. Otherwise you will need to set it up as new, update the Watch and then reset.
That's right (from memory also). Depending on how your watch is set up and how much of your data is on iCloud or some other remote server, that's probably not a problem.

But if it were, I think you could do this: pair the watch and let it sync - then update WatchOS on the watch so it was the same or higher than what your old watch was running - then unpair the new watch - pair the new watch - restore the last backup from your old watch. It would be fairly time-consuming but I think you'd end up with your last backup from the old watch restored onto the new watch.
 
My Hermes is in KY right now. There are two flights out later this afternoon to Ontario airport here in
Los Angeles today. i expect that my watch will be on one of those flights It does not look like there’s any flights in to LAX today, so I guess it’s going to Ontario. That’s where my iPhone 13 Pro Max went a few weeks ago. So I don’t expect any movement on my watch until probably around 3:30 PMPacific time. Still have not received an email from Apple saying my watch has shipped and my status on Apple still says preparing to ship even though I’ve tracked it to Kentucky. For those wondering the UPS flights out of Kentucky to Ontario today are UPS2908 and UPS2964.

anyone else heading to Los Angeles?

Germany here. Today my credit card was charged. Nothing more yet. No tracking number, status is still "Shipping is prepared".
Over here it goes to a private company ( at least in Paris ) called TousFacteurs and they do the delivery. It’s really cool , you can follow the delivery guy on a map in real time.

I’ve been checking to see if I could snag an in store pickup SS watch for launch day. However as of this morning they seem to have disabled in store pickup as an option for now.

I noticed that too here in Texas. I was hoping to do a SS in store. Guess we are out of luck.

wonder if we were over tasking servers.
 
Ditto on both counts. I’m collecting from the Belfast store on Friday morning. I reckon we’ll wake up on Friday morning to find credit card charge and “in store” status. They are almost certainly in stock rooms just waiting for Friday.
Actually last evening I unpaired my 4 and set it up as new as I had a problem with an email address and haven't sold it yet .
It's fast an easy , much more than on a iPhone . So I guess I'll set up the new watch as new also .
I’m not sure what if anything is worth keeping from the the backup - will the apps just flow down from the phone?
 
If you choose it that way during the pairing, yes.

The backup is most useful for those with a bunch of customized watch faces, since you'd have to set them up again.
You can back up watch faces separately by sharing them with yourself. I created a folder within my files app that contains all my watch faces and if I need to set up a new watch I can just grab them from there afterwards
 
Walmart just charged my card! No update on order tracker yet however. Still nothing on the Apple Store order. Any other fellow Walmart buyers?
I ordered a 45mm Stainless with a delivery on Monday the 18th, my credit card still shows pending
