Yes, we have to trust that the product photographer has corrected for white balance using an 18% grey card or ColorChecker or similar. Even doing this, there can be hue shifts in particular parts of the spectrum depending on the particular camera, post-processing software, etc. Getting "true" colors in product or art photography can be very challenging.The white balance of a photo effects the color of everything in the photo. In a real photo you can see something familiar (say a soda can) and judge the WB. And therefore know what tint is masking the true color.
With a white background there are no such clues. Which is all we have from apple until units start hitting the real world.

I actually think this looks best on the watch, where it would work with lots of different straps.I made a composite of all the Starlight aluminum finishes (on watch S7, iPhone 13, and iPad Mini) that I could find on Apple's website. I expect slight differences in hue are due to differences in color temperature of the lighting/photos:

Seriously, it's the color of watered-down urine. I don't know whose bright idea it was to replace silver with piss-yellow, but they should be fired or at least moved to a less influential position.
On this picture I do not like the silver. It looks too yellow. I like purple but unless I go with a purple case it’s hard to match. So boring grey it is.I might change my order from Starlight to Space Gray. The only thing is that Space Gray has always been different on every product. It's hard to tell what we'll actually get.
