The bezel makes the iPad much bigger than it could be.
I don't think it's out of ergonomic but for technical reasons.
So where would your thumbs be while holding it...?

Nah, but you need that white space all the same, would be annoying if you had to move your thumbs while reading because they covered some of the text.., and with the touch screen, registering those the thumb as a touch, would probably be even more annoying...wouldn't it...?
I don't think I have big enough hand to hold an iPad at the edges, at least not while I'm holding it with one hand to type with the other...

Not exactly thumbing over the white space, do you? (only a bit, to hold the pages).
A device like the iPad has more rigidity and could lay on your palm, and you hold it by the edges. And your hand will, when reading for a long time, be supported by the armrest, your lap, etc.
Take anything that measures 10" diagonally and try it out.
Of course, with the bezel, it's now much larger and harder to hold.
