I started the download and then put the phone in my pocket. I could swear it was under 50% and did not display the "your iPhone was updated" screen afterwards. So it seemingly updated without any notice. I did not even know it has completed updating expect the update screen says I'm up to date and the build number of the one of beta 3. Weird.
 
I'm sensing conflicting answers here

I performed an encrypted backup with a password to my MacBook Air. Once the backup is complete click on manage backups and then right click the backup you just did and click show in finder. Double click the folder and look for info.plist at the bottom. Right click this file and select open with. Select other and scroll down to text edit. Scroll all the way to the bottom and start working you way back up looking for a section that contains product version. Directly under product version it will say string 17.1 string. Make that say 17.0.3 and then click file save. Once this is complete place you phone into Dfu mode and hold option click restore and select the 17.0.3 ipsw file. Once the downgrade is complete restore from the encrypted backup and enjoy keeping all of your data. This is the exact process I used this afternoon.

Just making sure I haven’t missed anything. Why are so many keen on going back to 17.0.3?

Personally I only updated to see if it would fix the overheating issue. It did however WiFi has been horrendous and random reboots overnight had me looking to make it to the official 17.0.3 containing the fix for overheating. After being unsuccessful many times it became more of a personal mission to accomplish it. Couldn’t let the phone beat me.

I had a couple of annoying issues on beta 2, but this is beta 3 now so I'll check it and see if it's worth going back down to the latest public release. I also just have an itch to wipe and restore like it came out of the box, but not by using reset on the phone.
 
iPhone SE (third generation) modem firmware is—and has been since at least the last beta—at 3.10.02, reaching parity with other A15 devices. Running quite well here thus far.

apparently the reboots overnight are happening to everyone now even on the stable releases

What I said was about the officially supported way. iCloud will not let you restore a backup from a newer version. There are workarounds like backing up to a computer and then editing the backup file but there is a chance of that causing issues between certain versions. Since mtcislak tested it already it seems to work for these two versions.
 
Here we go again, the downgrade madness begins. 😆😂

It’s quite shocking to see recently the amount of people that just blindly jump into something on their main devices - just to get a fix that may or may not work, on beta software.

Genuinely feel sorry people that lose their data and are up sh*t creek.

I wonder if Apple should put some warning pop up screens when you enrol your device into the beta programme, to provoke a sense of awareness to what you are about to get into 🤷🏽

That happened to me. After I received the error I did volume up volume down and held side button till apple logo appeared. My MacBook came up with a message saying had to download something to communicate with iPhone. It worked for me next try after that.

Ah yeah, you're right. The prompt to download whatever it is was hidden behind my currently open windows
