Apparently @Zab the Fab is using a genuine apple keyboard so it's the right keyboard for cmd-functions at cold boot, it's really weird that can't at least make working alt-option for the apple startup manager. Maybe broken alt-option/cmd keys? Or incompatible ssd sata controller side effects.
Well I have learned a lot about how key-commands needs compatible keyboards, I had no idea. The keys are not broken because it works fine on my new iMac 2012.
If I could only find a copy of El Capitan somewhere. You would think this was an easy task, but. Any ideas anyone?

I am not quite sure what you are hoping to achieve with the El Capitan installer. I have a 64GB USB stick that has the Mojave patcher along with other Mac OS X installers from Leopard to El Capitan. When I had a similar issue, I was unable to boot to any of them on a MacBook5,1. But I was able to boot it on a MBP9,2.

but this is better to be opened and downloaded from an HighSierra Mac since it used the old App Store (that I preferred rather than the new Mojave App Store).
Anyway you need this file "Install OS X El Capitan.app" from web searching, file size is around 6 GB , after you have one you can create an usb installer.
Just OTA updated from .5 beta 5 to .5 final, everything confirmed to work as expected.
I'll add just few notes later.
First of all, to those who edit and update the OP, add a credit to @ASentientBot for CoreDisplay fix , since non-metal acceleration work fine on .5 final, and there are also good chances that this will be valid till 10.15 and forward .
Then a quick recap:
- IOUSB* kext work OOB
- @pkouame even on .5 final I have News without News+ and doesn't crash under acceleration
- DualGPU dynamic switching still require a manual fix, I attach a semi-automated script I did for myself during betas, and share for those who want to try it.
@0403979 take a look to the script, it works correctly on dualGPU MacBookPro 6,2 15" mid 2010 and I assume it could work also on few other machines.

The script has a fixed position, so it must executed directly from the downloads folder without moving or renaming the folder, I forgot that.
A small ask: could you identify which versions of kexts and frameworks you are swapping ? For example IOGraphicsFamily2.kext from .4, IOAccelerator2D.plugin from .4 etc... I think others may benefit from this too.

They are all from 10.13.6 (17G6030), they followed after manual patching, but they should not break nothing even if used after the dosdude1 Mojave Post-Install.
From my test the GPUWrangler framework (implies the AppleGraphicsControl.kext) allow me a correct GPU dynamic switching (gfxcardstatus.app), without it I can only stay with the discrete GPU even if they are detected both in sys profiler, so I consider GPUWrangler useful for this scope to use both the GPUs.

I’m not sure what happened but my MacBook Pro (mid 2010) seemed to auto update and now it won’t go beyond showing the Apple logo and the power icon that says “press a key to restart, the Mac didn’t shut down properly”. I really hope there’s a way to recover from this(?)
The latest video driver patch available on Update Patcher isn't working for MacbookPro5,3. I had to boot first 10.14.4 image for old macs and rerun post-install to replace drivers.
In the same time, usb ports not working properly when using external drives.

Minor Issues
Currently, pre-metal video cards used in Mojave will produce a weird darkish grey Menu Bar and Finder sidebar when using the light theme. In the dark theme, these anomalies are not present, while other, less obvious anomalies are present (window corners may not render properly, bottom part of dock menus may have artifacts). A workaround for graphics anomalies in light mode is to enable Reduce Transparency in System Preferences > Accessibility > Display (this might create additional side effects beside the obvious loss of transparency as some systems with pre-metal AMD graphics render the dock in dark gray).
Currently, built-in iSight cameras do not work correctly on some machines. It seems to be hit or miss, but when installing, expect your iSight camera to be non-functional.
Trackpad multi-finger gestures on both machines not supported in Mojave. While the trackpad works and is fully usable, Mojave detects it as just a standard mouse, preventing you from changing some trackpad-oriented settings.
Major Issues
AMD Radeon HD 5xxx/6xxx series GPU acceleration"]
Currently, it is not possible to get full graphics acceleration when running Mojave on a system with a Radeon HD 5xxx or 6xxx series video card. Mojave will be almost unusable without graphics acceleration. This includes the 15" and 17" MacBook Pro systems (MacBookPro8,2 and 8,3). If you want to enable GPU acceleration on these machines, you'll need to disable the AMD video card (This will work on MacBook Pro 8,2 and 8,3 systems ONLY. You CANNOT disable the AMD GPU in an iMac.) Weird colors will also be produced when running Mojave with one of these video cards installed/enabled. To disable the AMD GPU on a 2011 MacBook Pro 8,2 or 8,3, follow the guide found here.
When running Mojave, you CANNOT use a newer AMD video card EVEN IF it is a Metal-compatible card and is supported in Mojave. The newer AMD drivers used in Mojave require the SSE4.2 instruction set, which the MacPro3,1 does not support. There is no way around this at this time. Your only GPU upgrade options for MacPro3,1 systems are Nvidia cards, which work perfectly fine.
Some users have reported crashing upon opening the App Store. This is caused by App Store videos and can be worked around by disabling video autoplay and not viewing App Store videos. This is not a fix, this is a workaround. Safari may also experience crashes with certain kinds of embedded videos.

I'm currently running Mojave 10.14.3 using DosDude1's amazing macOS Mojave Patcher with 6GB RAM on a 512 GB Samsung 840 EVO SSD... and have skipped the problematic 10.14.4 update.

updated MBP5,3 Mid 2009 to 10.14.5 (18F132) from .5b5, I re-applied the patches with "macOS Post Install.app" 1.3.1 and force rebuild cache.
iSight (with FaceTime), Siri, Chess, Flurry and News work well (still no News+)
When creating the patcher USB stick I always have to download a full copy of the OS, although patching using the system setting seems to be possible. Is it possible to create a the USB stick without the complete OS download?
got my MBP 6,2 updated but having issues getting continuity working. the bt4lecontinuityfixup kexts are loaded but doesnt seem to do anything.. Airdrop is of course not working either. Even the Siri waveform animated really slow like there was no acceleration (but there is as the dock is transparent)
EDIT: restarting it made everything working again. Apparently on the hackintosh forums, SIP has to be set to 0x3E7 instead of 0x67 as the latter causes issues with kext injection. Hopefully this isnt the issue im experiencing
