It was like this already with Catalina and the dosdude1 patches - patches go to /System/Library/Extensions, ../Frameworks etc where they get overwritten with the content coming with the new OS version. Patches thus need to be reapplied, and kernel caches, snapshots etc remade.I guess. I just expected them to stay where they were rather than being deleted during the update. I guess things are different with sealed snapshots...
Some of the patches modify original files and it is normal to get overwritten. But some like Nvidia drivers are the original drivers from early Monterey, which don't exist in the later revisions. 12.0.1 on my internal drive behaves quite well now. Installed, patched and booting it with OCLP 0.3.1.Safari and Firefox work fine in 12.0.1, with and without root patches of 0.3.1.
Will downgrade Monterey on my internal drive from 12.1b3 to 12.0.1, until 12.1 release comes out and is stable with 0.3.1.
Big Sur 11.6.2 in another partition of the internal drive is still my daily working and reference system.
EDIT: forgotten to mention that I had tried to replace the WebKit.framework in 12.1b3 with the one from 12.0.1. It didn't help Safari in 12.1b3 and didn't harm either.

MacBook keeps switching off when unplugged don’t really think it’s related to the beta although battery is reporting as normal on it fine between 50 to 100%.

This OCLP_032 version is probably as good as it can get on these primitive Mac models, overall performance akin to Mojave/Catalina. Catalyst worts seem improved, too.Confirmed on MBP5,2, with both 12.1b3 and 12.0.1.
Rather than using the latest 0.3.2 nightly, I was using the OCLP 0.3.1 release with the minimal substitution of SkyLight.framework binaries taken from a Discord link.
Sure enough BlurBeta is also part of this SkyLight.

Installed the GenericUSBXHCI.kext to my 12.1b3 testing ssd, but it didn't help - mouse still working with the USB3 ports, but connecting a SSD stops cursor reaction.Didn't try yet but will do right away.
Mouse still works with these USB3 ports as before. Now connecting a SSD to them, and if it won't work, will try the drivers you mention. Thanks for the link.
