Yes. NVME sticks will boot everything from High Sierra through Sequoia. Tahoe too I expect, but OCLP doesn't support Tahoe yet.
Is there a special process to get the McFiver running, or can you just run OpenCore.

I know Lance from Mac Solutions had issues getting the 10gigbit portion to work?
 
If you boot macOS versions up through Monterey, you can just use OCLP. OCLP will see the card and apply proper drivers.

However, if you want to use Ventura or higher, you need to make manual adjustments. Otherwise, OCLP+McFiver will prevent booting in all macOS versions above Monterey.

The simplest solution is to disable the 10G driver, instructions posted here. If you want to do custom config work, it's possible to get the 10G Ethernet port working in higher macOS versions.

@the1010 points you in the right direction in the linked thread (first reply after my post). Those instructions ultimately lead to this GitHub page. I haven't tried those instructions yet.

My LAN is limited to 2-3 Gbps, and I'd have to reapply the manual patching every time OCLP is updated. So it was easier to use port aggregation with my two built-in ports, for reliable 2Gbps service, and just remove the one driver after each OCLP update. I'd planned to try the full 10G instructions after OCLP stabilizes with Tahoe support.
