Despite a total lack of built-in cable management in the displays, you can do a surprisingly decent job with just some cable ties.

(Desk is usually far messier! :p)

How well does that MBP drive those displays? Also have you noticed any issues that have been reports by others like poor battery life and such?

Not well - I have had massive sleep/wake issues since getting the second monitor. When waking, only one display will light 99% of the time, until you un-plug and re-plug the blank monitor. There are similar reports online. I'm thinking of installing the 10.12.5 beta on a partition to test if it fixes it.

Battery is a moot point when connected to the displays since they offer charging, but in general I've had great battery life from the Pro after some software updates.

And one of the best parts - Paradigm Millenia CT 2 Sound System - Handily beats my older Bose Companion 5's in sound quality, a massive step up in sound (and build in some regards) quality, glad to be back in the 'Hi-Fi' circle of the things. Now the Bose were no slouch, but these Paradigm's are truly the 'Apple' of sound systems - both in build quality/attention to detail and sound quality.

Can the 2012 push 4k at a reasonable hz?

It's 30Hz. The only way I notice that is not 60Hz is when watching a movie on YouTube recorded at that refresh rate, or when using RetroArch to play NES, SNES. In those cases I simply change to a 60Hz and no HiDPI resolution on the System Preferences. For my work on book and magazine design this setup is enough. Hope it helps
 
If this is your home setup I'd be curious to know more about your phone setup on your desk - is it connected to your work IP phone PBX or is it a home IP phone setup? Feel free to PM me if you'd rather not post here.

I'm the Cisco network guy at work so yes this is my home setup. The 7975 phone has a native Cisco Anyconnect VPN client and that allows it to tunnel back to our primary datacenter where the voice servers are and route to whichever gateway the calls take it within our WAN.

This is the temporary desk (made room for our newborn). The imac is 21,5" 2.9 ghz 8gb nvidia 750gt. The macbook air i picked up yesterday for 799€ new. 13" 1.6 ghz 8gb 128ssd. I use a lacie cloudbox for sharing and a toshiba alu hd for timemachine backup.

My 2014 Mini with an HP 21.5" 1080P IPS HDMI monitor that I picked up on Amazon, Logitech speakers and sub, Logitech solar powered wireless keyboard, and a wireless mouse I picked up on clearance at Walmart. Works pretty well and fits snuggly in my single bedroom apartment.

I'm loving it, to be honest. 4k is a bit overrated at the moment, in my opinion. I have no use for it currently, nor do I feel like spending the extra money for something that I find unnecessary in the first place.

May be great for some, but I'll never take full advantage of it. At least, not yet. I'm still rocking a 1080p TV and I love it just fine as well.

The monitor I am using is the best one I've ever used. Never had a full HD monitor before. Always had sub HD laptop PC displays that were merely adequate.
