Regarding speed, I've noticed more slowdown on a jailbroken phone with Winterboard installed when loading and exiting big apps (like games).
A test similar to:
1. Run Real Racing (or a large game like this)
2. Play for a minute or two
3. Exit Real Racing
Which phone is quicker? My guess is the jailbroken phone will struggle more with this. May not be enough to be bothersome, but I suspect it would be slower. Just sayin'

Yeah, my phone seems to be more noticeably slower than my wife's these days, it's almost as though it has slowed down a bit since I first jailbroke over a month ago. The slowdown isn't enough to dissuade me from jailbreaking, but it is there and it's very obvious when comparing the two phones side-by-side.
