Probably because they're still beta testing right now? They recently released updates to the betas, suggesting they're still testing them right now.

No, everybody is sure it won't release since rrabis said on the official forums that they are giving tf2 for mac some more time

Because it's not ready? Simple as that. They may be waiting for the engineer update as well. TF2 is the first Source online game, they need to test the netcode more carefully on the Macs, to make sure it works right against Windows players.

Steam Store has started to change a bit, the orange box has gone back up to full price etc so something might happen soon.

I'm not too bothered if that is the case. I'd prefer late but ready to use TF2, than a on time but buggy TF2.
If something has gone wrong and they were going to release TF2 but its been delayed then fair enough, but the least they could do is give us a time frame, nothing exact just - "in the next 1-2 days" or "next wednesday".
I bet the "awarded additional time" comment was meant that TF2 is releasing today, but something is holding it back. No idea what that could be, but that would make sense to why nothing has released today so far.
