The original intent of Verizon forcing all smartphone users back in the day (usually windows mobile/blackberry/palm treo) to get unlimited data (circa 2004-2009) was because Verizon (and att) publically stated they to "help" consumers avoid sticker shock by having unlimited data.
So by forcing everyone onto the $29.99 unlimited data Verizon reasoned it was in consumers best interest to have a uniformed billing process with the same bill every month.
Of course those days blackberry users were using on average 25-50mb month back in the days.
Now it's a money grab for carriers for tiered data. Because they can't make money off texting or voice anymore. Data is only line of growth.
And like any smart company, they found how to make money and adopt in the industry.
Also, I'm not sure everyone here is talking about the same unlimited data plan.
No one used some ****** non-iPhone data capable device before the iPhone for $30 unlimited/month. If you did, then you probably do deserve unlimited because building a time machine is no easy feat.
Early 2011, Verizon and Apple announced iPhone 4 for Verizon (hey it was actually Tim Cook back when he was CFO and typical white CEO guy who sounds just like the stereotypical guy to run Verizon). Exactly the same phone as AT&T expect for 3 notable differences.
1. Obviously its on Verizon and not AT&T. So GSM vs CDMA.
2. Because its on Verizon, it uses its plans. Verizon offered $30/unlimited as an incentive to get people to upgrade to the iPhone.
3. Had tethering in a Verizon only iOS update. AT&T would later get it via their own update, but in the press conference, it was considered as a feature for only to Verizon customers.

Basically now, everyone has a smartphone. No one needs an incentive to upgrade as long as Apple keeps on making hella hot colors like that yummy rose gold LOL.
Money grab is kinda a strange word to use considering you (the consumer) seems to also be grabbing their data. Money grabbing, is literally grabbing the money from your friend while playing Monopoly because he wants to make some stupid ass trade, then you end up loosing a friend after drinks, the board, and the table are spilled.
This sound more, how can I say it? Normal? It sounds kinda like a trade in where there's a contract. I think the trade works by you giving them $$$ and they giving you D A T A to use.
Plus, no one here actually reads the terms of service just like how we don't read the terms of service to anything, including that iTunes one. That one, is simply...only Apple could do something so amazing.
