Chia pudding in the summer is nice. And for men of a certain age and beyond, it's good fiber and completely digested without having to be chewed or ground up. I do a warm soak in coconut or almond milk and then top up and refrigerate or switch over to whole milk and use that. Leave it overnight and it's a nice thick dessert. Beauty of coconut or almond milk is you can blend fruit with it and use a smoothie like mixture over milk which make curdle due to acids in the fruit. Cheapest price I've seen is about $7 for 2 lb of organic chia seed. If we're talking about quinoa, I go for the white variant since its taste is near non-existent, and I can get 4.5-5 lb of organic white quinoa for under $14, I think. Though we buy from a membership warehouse store, so it's going to be cheaper than any regular store.
