Keep it in the shade, but not in the fridge; that stunned sense you from a good white that has spent too long in the fridge is only a part of the problem, as the wine will also lack taste. And ice cubes in white wine - a good, classic white wine as a Puligny Montrachet is - are an offence against nature and good taste.

If you have access to a room with air/con, that might be a good place to store the wine between topping up glasses.

Enjoy the wine, anyway.

My pleasure.

While white wine is far too often stunned into insensibility by having spent too long in a fridge, the other alternative in a hot climate, something tepid, is equally unappealing.

Hence, old fashioned ice-buckets, (which - while they look good - are a bit brutal - on the wine - in my experience).

You want the wine cool, but still crisp enough to be able to taste what it offers.

Tonight, we have been sipping a splendid white Burgundy, a 1er Cru, called Chateau de Davenay Montagny Clos Chaudron 2011.

Sublime, smooth, with notes of peach, vanilla, a touch of pineapple, a refreshing acidity, altogether quite lovely.

I could add that it has a nice heft, a beautiful balance, and decent depth of flavour.

A beautifully structured complex wine; highly recommended.

Tasting notes I found in a review online accorded with mine (and I hadn't come across them when I posted as I hadn't consulted reviews before I commented on the wine - as I hadn't had it before tonight, but - as per usual - it was highly recommended; in any case, I checked reviews subsequently to see what had been written about this wine) when they wrote about "notes of tropical fruit, including vanilla"....

Anyway, a lovely, complex wine.

Cheers, Sceptical. As with any sherry aged Scotch, it's always a surprise, as most Scotch's are aged in previously used American whiskey barrels. Though the high and often rising cost of ex-American whiskey barrels may cause a flavor change in future Scotch in about 20-30 years, which may increase costs due to more aging to get a smokier flavor and not a sweeter flavor common in American whiskeys, as the use of new barrels using American white oak becomes cheaper compared to used barrels. Call me skeptical, pardon the loose and unintended pun, for buying several expensive bottles from quality distillers and keeping them for future use, unopened. Being honest, I have yet to buy a bottle of quality port, wine or Scotch for my children's 21st in the future. Though I'm told this is standard practice among most Americans, despite how silly it seems. American culture may have been the portion of the better part of 40+ years of my life but I still find of some or rather most of the customs rather silly.

I've been dealing with an annoying upper airway cold for a week and nature's best medicine is far better than any traditional medicine, which may annoy good old Goldenwhatsit.

Tonight's beer, (well, porter) is a 'milk chocolate stout' by the name of Lugene, that has been brewed by the Odell Brewing Company.

I just looked this up and yup, I am adding this to the list of beers I want to try! Their "Cutthroat Porter" looks delicious as well!

It's currently nearly 8 AM and I'm still prepping and cooking. I've indulged in a bottle of Rogue chocolate stout with some bitter dark chocolate biscuits here and there over the last few hours. Even at room temperature it's a delight to consume. The last time I remember consuming beer at this hour was... well, I was a great deal younger.

I'll probably follow old Winston and have some average scotch with soda water throughout the day. Maybe muddled with some thyme. Festive and all that.

Not tonight.

As I am no longer in the first flush of youth, the days of mixing and matching the grain and the grape are long behind me. For the most part. Granted, occasional lapses do occur.

However, these days, I tend to confine myself to one - or the other - on a given night.

Tonight, - mainly because of dental niggles - a tooth partly disintegrated two nights ago, and, being the time of year it is, I will not be able to have it seen to until Tuesday morning (an appointment has already been scheduled for Tuesday morning), the slightly acidic nature of wines, even the smooth wines I love, might not be entirely appropriate.

Hence, the grain. A nice smooth, rich, porter should do the trick. Or two.

Hence, tonight's beer (sorry, porter) of choice is a splendid stout from the Buxton Brewery that goes by the name of "Yellow Belly".

Sublime.

Exceptionally good and - therefore - extremely highly recommended.

I have already kicked it off with "Victory at Sea Imperial Porter with coffee and vanilla". Great beer. Next up was a Stone Vanilla Porter. I love Stone brewery! In the drinking que is a Bourbon County Stout, which will probably be saved till the very end. Sipping this one as the new year rolls around.

I also had a Lost Abbey "Angel Share" barrel aged ale. Wow. I was not expecting this one to be as good or as strong as it was. It has a high ABV, but the flavor packs a rather potent punch! Here is hoping I making it to midnight!

Well, I don't doubt that you will make it to midnight - but it is entirely possible that you may see midnight in double focus...two midnights, perfectly matched....
