I don't know if this has already been posted, but:

The App Store now shows your current account on the bottom of each search page. Clicking on it will allow you to sign out or login to view/edit account information.
 
TV Shows are bunched

Another new discovery:

TV shows are now all bunched together. Previously, each season of a show would be separated (I'm a minor sci-fi nerd so) ie.
Stargate SG-1: Season 8
Stargate SG-1: Season 9
Stargate SG-1: Season 10

is now grouped and splits in the next menu:

Stargate SG-1
>Season 8
>Season 9
>Season 10

And to DscrdngAllThght: Thank you, this is a HUGE discovery for me as well, since I have an iPhone attachment in my car and hate having my Maps app close whenever I want to go to the next song! Thx for the discovery (even though I would probably have noticed tomorrow morning on my drive to work :()
 
Not sure if this exact feature was mentioned, but when using the camera, if you tap on the previous photo (bottom left) and go to the flimstrip, you can select "Done" to go back to the camera.
 
• when moving icons on the home screen and you move an app to a different page, if you keep the icon to the edge of the page it will go on to the next page. previously you had to move the icon away from the edge before you could keep moving it to other pages.

This is incredibly annoying. It makes it very frustrating to reorder apps, if you ask me.
 
In iTunes, on the iPhone page when it's connected, you can now Encrypt iPhone Backup and it prompts you to choose a password to protect it.
 
If you select text in Mail and hit reply, only the selection will show as the quoted text. (thanks to @gruber!)
 
In "stocks" -

While viewing a chart in landscape mode- If you put two fingers on the chart, it will display the difference in value (both numerically and by percentage) from the first point to the second point.
 
Taping and holding a link in Safari now brings up a menu with "Open" "Open in new window" and "Copy" which copies the link location (found by jman240)

And, tapping an email address on a webpage takes you straight to your email, inserts the address in the "To" box and lets you start composing an email message.

i had that with 2.2.1, don't know if it goes further though.

new feature: when yo click either home screen or lock button, the month now appears completely(i.e: used to apper jun, now appears junio (in chile at least))
 
You can now close a page in Safari when there is only one page open. The page is closed, and a new, blank page is opened.
 
TV Shows now sorted in ascending order

Previously TV episodes within a season were listed on the iPod in reverse sequence (eg. ep3, ep2, ep1) - but now they are listed in the more usual ascending sequence (ep1, ep2, ep3, etc).
 
• the options under "Add Field" when inserting a contact is now segmented and you can now add important dates (i.e. anniversaries, i think this is new but i'm not sure) and you can add IM usernames to contacts

this is not new...i know for a fact

This does not work on a non-3G iPhone. The option doesn't appear.
There's a LOT of missing stuff on non-3G phones.

Now you can only take screenshots when the apps are positoned. You use to be able to take them while moving apps pages and it was a great prank to have images like:

Tons of these "hidden features" are either not hidden (they were announced at some point such as during the developer preview) or are not new at all.

Will anyone be making updates to reflect that?

Uh you can add a custom label here and put anything you want, including iPhone, it's not really a meaningful new "feature."

This has always been.
 
Honestly you dudes need to realize how little you knew about the existing phone you already had before the update haha so many things people think are new.

It's like the classic "It's so much faster after the update!" just like after every time you restore...

Has anyone found out yet that tapping the Wi-Fi icon gives you a numeric signal strength indicator? And Macisgr8, I was still able to take a screenie of the in-between pages. :p

Exchange Follder Push

You can now select which folders to push from MS Exchange so you can have folders other than inbox synced
