Just got off the phone with apple and one of the nicest employees I've ever talked to. I explained the situation and they said they were aware of it but didn't know what was wrong yet. My warranty was out and she was nice enough to extend it and send me a brand new no refurbished phone.
Please someone else, try this as well. When you find your 3G unresponsive do NOT reboot it. Just set it down and watch it for a bit. See if yours comes up too.

Ok. Just happened to me for the third time today. I let it sit and it came bakc on after nine minutes. When it comes back it's like it's like it's resetting itself as it has to find the signal again and reconnect to the wifi.
But now knowing it will lock up and then reset itself there's no way to tell how many times it's really happening. We knowing know the times when we see it.

I've had this since the betas too. It got a lot better after the 3.1 release update, but I had it happen for the first time today after the 3.1 upgrade.Unfortunately I had this issue in all of the 3.1 Betas. The issue was even reported in the iPhone developer forums. I can't believe this is happening. I have 3.1 release version and I still have the problem.
It seems to happen more frequently in certain locations. Especially when leaving work, I have 3G on my floor but as I descend the stairs, I lose 3G and the iPhone reverts to Edge. Also seems really flakey when using my in-ear headphones.
I've raised a bug with Apple and they've asked me to provide the following:
1. Download and install iPCU from http://www.apple.com/support/iphone/enterprise/
2. Launch iPCU, then connect device with USB cable
3. Click the Console tab in iPCU
4. Reproduce the problem
5. Click the Save as button to save the log to a text file.
6. Attach the text file to the bug report
Step #4 is the pain since it's extremely difficult to reproduce. If anyone can reproduce, then I'd *strongly* suggest following those steps and raising a bug.
I did not reboot/intervene on either of the times my phone has locked up. It came back to life after 2 minutes or so each time (not 10 minutes like you experienced).
Who do you need to sleep with to have a phone sent out? Both people I have spoken to have just told me to restore as a new phone/from a blank user account.
My warrenty runs out in 9 days and i am not going to let them get out of breaking my phone (if this is the case) and then making me pay for a replacement!
Can anyone who is having these issues and using Google Sync (enabled inside of the iPhone) using the Google sync settings for Exchange to sync their contacts) can you disable that and go into iTunes, go into the info tab for your iPhone and in contacts select Google Contacts. This will bring up a window to log into your Google Account. Once you do that then sync your iPhone and then over the next 24-48 hours report if you have had the issue again.
I did this with the new phone the Genius Bar gave me and Im starting to think that the Google Sync (w/exchange) is a possible catalyst for some of us. Not the main cause or even exchange being the main cause for that matter. But I believe it is a factor in the issue.
Thats how Im set up since I got the new iPhone and no issues. This might help us (and Apple) narrow down the issue.
