I had been checking this forum quite often because I was in the same boat as many of you: "In Progress" with my delivery by dates showing Oct 27 - Nov 3. However I know people who ordered the same model (12 pro 128gb graphite) after me and have received it already. Since my initial preorder on Oct 19, I had many a difficult conversation with AT&T customer service.
Today, I realized that Best Buy had the order available to deliver Oct 28 (guaranteed). Naturally, I enquired about canceling my AT&T pre-order and I got a lot of scary answers like "it could take 3-5 business days". I was so fed up with the AT&T process that I took the risk and canceled my order.
QUITE fortunately, the upgrade showed up as eligible on Best Buy's website. Even MORE fortunately, they had one pacific blue 128gb available, which is the model I was most interested in. Perhaps, MOST fortunately, I didn't even have to wait till Oct 28: it was instantly available to pick up 40 mins away (in Maryland)!! I placed the order two hours ago and would have gone to pick it up tonight if I wasn't so tired from 6 hrs of back to back classes. But tomorrow morning for sure!
I understand that everyone still stuck on "In Progress" might not have stock available at their local Best Buy, but it's worth checking honestly! Otherwise stay strong, and hopefully we all learn our lesson and preorder with Apple next time.
TL;DR: AT&T preorders suck for some reason, I'm highly impatient, and I got lucky with Best Buy.
