I honestly don't think we will get a new watch this September. I think Apple is going to keep a 18 month cycle for watches, so its spread out a little bit so it's not as painful for users to upgrade.

You mean the one iOS 11 beta and the couple of 10.3.3? I didn't say all, I said vast supermajority over 24 months.
Topic 1: I disagree, I think Apple won't miss the opportunity to launch a new Apple Watch alongside iPhone X. It is an iPhone Accessory after all. As far as "upgrades"...there really isn't a clear upgrade process for Apple Watch. And, there hasn't really been a compelling upgrade for Series 0 owners yet...Series 2 really didn't qualify...while faster, it was mostly targeted at new users that required waterproofing. I very much think we'll see a Series 3 with an S3 chip this year.

Topic 2: You really can't go by day of the week anymore. They release Mondays, Tuesdays, Wednesdays, any day that lines up with their plans.

The fact that they got released to developers and public beta testers at the same time indicates that Apple are fairly certain that these are the real deal.
Its also the full installer for those on DP5, so definitely the final version.

You are still missing the point. I answered a question about what has been the typically release date. The vast supermajority has been on Monday. Thats a fact.

No, there is purposely lead time to give any unforeseen issues a chance to materialize before unleashing it on the public.
They eventually do sync up, just like every year (thus far). Typically around DP5/6.

Its the final. The new build is 14G57/14G58, the previous build was 14G5057a, so they removed all beta junk and seeded it to developers first.

Beta or not my phone is crying out for iOS 11 beta 3, it's that bad I'm thinking of cocking up my watch and downgrading just to get some stability back to my phone.

My iPad Air 2 is completely unusable. Battery dies in 8 hours without using it. I want beta 3 desperately, but it appears it won't be till Monday.

What I believe may be the final releases of the old OS beta's, iOS 10.3.3 and MacOS 10.12.6, were released to BOTH developers and public testers. At least probably the final versions unless some big, unexpected bug is found.

Hopefully we'll see the developer versions new OS beta's today as well though, if not, I'd assume we'll have to wait until Monday.

We have one data point and a reputed source. I could say I have a source, too, and that doesn't mean one exists. For all we know, the reddit poster got lucky.

No one got lucky. He has a source, and had the date pegged 2 weeks in advance. He even maintained that it would be coming later in the day. And it did, instead of the usual time.

If he says it is coming on the 10th, it is coming on the 10th.

This is like the guy who claimed we were going to see Theater mode in iOS 10.3. And it was going to definitely drop on (I think) January 10. No theater mode and no January 10. Unless I know more about the source, I remain skeptical even if he/she got the last one correct.

I think there will be 2 week cycle for public beta. Hence, third beta should arrive on July 10 or July 11 along with iOS 10.3.3 public release. Yes I know Developer Beta will hit the 2 week cycle tomorrow but public betas should stick with 2 week cycle which drop 1 or 2 days after Developer Beta releases. My guess is:

July 10: iOS 11 Developer Beta 3 and iOS 10.3.3 release
Jult 11 or July 12: iOS 11 Public Beta 2

Looks like I was right.

I went back and read his posts. He never once said it was coming out at a later time than the usual 10AM PDT.

Not really, they said it had a "strong possibility" of releasing on Monday (the 3rd) or some point this week as well. They clearly aren't even sure themselves.
