They most likely didn't work on much last week.
The feedback team was out for the entire week; it's likely that a lot (maybe most) of the development team was too, which means no testing of beta candidate builds. They're not going to push a build that hasn't gone through — and passed — internal testing to ensure that it doesn't, say, accidentally break cellular connectivity on a bunch of devices.

Agreed. Nothing critical for me now. Id like to see the swipe up stutter fixed. Thats pretty much my only remaining issue. Its not horrible on my Max like my 12 pro but still noticeable.
 
So this affects the 12 pro but not the 12 Pro Max?
Haven't seen it. I know that on my iPhone X, there would be a massive delay, then just a barf of text coming out, but to this day, I haven't seen it on my 12 Pro Max, and I've been using it since launch day.

Mind you, I also did sync my old Messages onto the new phone, so it's not like we're using a clean state here.
 
The iMessage notification bug is so bad. If no 14.3 today, which would seem too soon to me, then hopefully 14.2.2 today and then 14.3 final next week or week thereafter.
