Looks legit enough to me...
Though spoofing headers isn't out of the question, Apple has been assigned all of the 17.0.0.0/8 address space, so unless someone has gone to a lot more trouble than is likely (also assuming your Apple order number was accurate), it's no hoax.
But that begs the question... Why are people getting these emails, but also supposedly confirming via Apple/UPS that they will still get them on Saturday?
