I was going to wait to the end of the 14 day return period but my 7+ has become unusable, randomly from LTE to 1x even while walking in the city. I'm going back to my 6S+ now and the 7+ is going back to Apple.
Hopefully there is a fix for this issue by the time the SIM-free version comes out.
 
I just want to add my own experiences. I'm also in NYC with the iP 7 on Verizon and experiencing the exact same issue where traveling around periodically brings up the dreaded "No Signal" message. As a temporary solution, disabling VoLTE helps to retain the signal almost as well as my iPhone 6.

If it helps, this is what I'm running with:

iPhone 7 - 256 GB Jet Black
iOS: 10.0.2
Carrier: Verizon 25.1
Model: MNAX2LL/A
Serial (first 3): DNP - Factory: China, Chengdu (Foxconn) Week 37 (Sept 12-18, 2016)
Modem Firmware: 1.00.04

Was at the Apple store earlier looking at a 6s which I'm getting, awesome device and the rep who insisted on bugging me knew nothing about any 7 issues. Acted totally surprised. Typical. Got to be part of rep school training. Denial 101.

I've been using 6S after I returned 7 since yesterday afternoon. No issues to report! Night and day difference. Although I'm bummed out I had to settle for a year old iPhone at least the service issues are gone. Added bonus is I get headphone jack back :)

Hopefully your iPhone 7 issues get resolved soon.

I've been using the 6S+ now on the same roads and same route, no issues whatsoever. And I'm on 10.1 beta

If getting a new phone fixes the issue, then I'll take the time to get a replacement. If not, I won't even bother.

I'm on a new 7 I got exchange yesterday. Problem still exists.

Not surprised. Both Apple stores near me didn't know what was going on.
 
This probably won't make a difference but I took the SIM out of my work 5S and put into my 7. The phone can't enable VoLTE because the 5s doesn't support it and it isn't enabled on the account. Just another test.

In the beginning, we had to enable Advanced calling by calling vzw or logging in and turning it on. Maybe that's why you don't have the option.
 
Wonder if it's strictly the concentration of towers/geography or something else about the local Verizon hardware/tech.

Did someone say there was an app that gave details on tower freq bands, etc. in use? I've tried Open Signal and others and can't find one that gives any tech data.

Could be anything really -- best theory I've seen here has to do with specific bands and phones connecting and hanging onto towers that aren't the closest.

Returned my old 7+ yesterday (due to the hiss problem) and got a new one today. Will report back with signal results after I commute to work tomorrow. I'll leave everything enabled for now. I'm really hoping it's just a software issue and not a problem with the Qualcomm modem..
