Just drove the same highway I drive to work with my wife's 6S in the car. Continuously checked both phones and they both had the same signal strength of LTE. So maybe beta 2 is helping.

How I feel too, I'll be getting two 7 plus phones. There's no way I'm going to spend almost two grand and hope they work. Most of my friends local to me have issues, so I'm not buying until it's resolved.Hopefully this will be solved soon. Sitting on the sideline waiting until it is fixed.

I was talking to a Verizon sales rep and he said that his cell phone was fast but it was only showing 3G.I just got off a phone with Senior Rep with Apple, he said that is a well known issue for this Model # with Verizon. Engineers are working around the clock to fix this issue. Unfortunately this has only been known issue for about a week and half, as it took Verizon forever to actual go to Apple with these issues. Going to 3G only seems to have no issues.

ExactlyDoes Apple not test their phones on these networks prior to selling them? I don't buy that Apple excuse. If they don't test their phones prior to turning them over to Verizon, that's on Apple, because they should have seen these issues from the start.

If it's a carrier update, it'll just get pushed out. I would be surprised if Verizon would say anything else, other than to tell their support channels to tell people to wait for an update and install it.
If it's baked into an iOS update, Apple will probably say something benign like "bug fixes and improvements".
T-Mobile on the other hand... far more transparent in handling their iPhone issues.

It's almost getting to the point that if it was easy as a carrier update, it would've happened by now. So there could be more to it. Maybe a modem driver between Qualcomm and Apple needs updated? I'm just saying, there has to be more to it.
If it's the chip itself, then you have a mess. You will have 3 companies trying to communicate with each other trying to figure out the problem.
