Why would it be using so much? I'd be very surprised if the 8gb model couldn't manage this light workload...?

I had a windows surface laptop before with 8gb RAM. This is the first Mac I have had. I went for this as the Surface sounds like it is going to take off in video conferencing etc. Nearly all the advice seemed to say that 99.9% of non power users would be okay with 8gb of RAM. Surely I am the most basic of users - I'm a student, so all I use is MS Teams, safari and office applications. In the use case above I haven't even opened Word yet. WindowServer must be scaling or something. You have some non-native apps, too. In any case, looks like you need to shell out for 16GB if that's your normal.
It's not just power usage but how well apps are optimized for the M1, so some power users are doing well with 8GB with native Mac apps, and even some non-native ones that play well on the M1, and some non-power users aren't because other apps, or even just one app or page, cause more trouble. If this is happening as a result of connecting to the external display (which is when it happens to me), I found that restarting windowserver fixes it without the need to reboot.

I guess you are right, the combination of non-native apps (MS Teams mainly) and using an external monitor (at default resolution) seems to have such a massive RAM hit that I don't think this machine is for me. Its a shame really as I'm a research student and we communicate via face time and iMessage so I had been balancing an iPad and a windows machine and was hoping to have one machine to do it all. It also appears to suggest that most students that are using office etc are going to run into the same issue. Using an external monitor or scaling your screen may also be factor, if that's what's causing WindowServer to use a fair chunk of your memory. That's more than the usual amount in my experience.
If you want to try to make it work better without spending the extra money, you could try shutting down one program you think might be a problem, see if that works well, and then see if there's a way to adjust settings or use of the problematic program so it fits better. And try different motitor scaling.
Second video conclusion is funny. He condemns the M1 and says wait for another CPU? Or you know maybe MacOS 11.1? Driver bugs are probably not hardware failures.Question for m1 owners.

A user land kernel panic is always an issue.
