Apple don't even use real workstation video cards. The GPUs don't use ECC VRAM and they are underclocked to try to deal with the thermal problems.
The question had to do with workstation graphic cards in general, which you stated is an advantage of computers with PCIe slots having updated cards every year or two. But on a longer update cycle for these workstation graphics can take longer than that.
Apple not having real workstation graphic cards is quite debatable as even the PC workstation graphics are based on commercial based cards.
There are myriad reports of thermal issues and you dismiss them as opinion. Don't expect hard data because the only one's who have it are at Apple HQ.
