Seems excessive for no gain. Why not just drop a clean 15.7 on it? You can always try to uninstall safari and reinstall it. Mr Macintosh has a guide

the clean install had to be done cause the ssd drive was missing files and needed a clean snow leopard.
even cleaning and repair the driver in snow leopard was a task!

I tried for 4 days to reboot or do anything in BigSur hitch just spun into a non-working experience.
as far as safari, luckily there was a backup of Catalina were I dragged a nice icon strong safari 15 and am using that.
this is a MacBook Air 2010 which should not see the light of day, today

See #14,644. Make sure the OTAupdateFix button is applied immediately after the D/L starts. Since the iMac BootROM is unpatched, some form of OpenCore will be needed to see the macOSInstaller. Attached is a tool to do that. Follow the built-in instructions, closely. 🧐
I deleted everything in /Library/Updates, but the only difference was that SilentKnight needed more time to say I need to reboot (I guess because it downloaded newly entry update). But reboot was fas as usually, with iMac that come up with 19H15 again.... :-(
Trying OpenCoreAPFSloader3, at last I come every time to this:
Schermata 2021-10-06 alle 08.12.44.png

I tried first to install without erasing USB drive, and in second erasing it with OpenCoreAPFSloader (Install on external USB empty device), and at last erasing the drive with DiskUtility. But as I said, I become every time in the error above (if not some error before, as an existing folder in /private/tmp/... that I removed to go on).
Some other suggestion? Could patching iMac's BootROM be a better strategy (but I've no idea how to do this)?

P.S.: I noticed that OpenCoreAPFSloader created a folder named EFIext in /Volumes, and I removed it before restart entry process again... but OpenCoreAPFSloader recreates the empty folder without mounting the USB EFI partition.

This error 71 is most likely due to no EFI partition. You need a USB stick with at least 4GB for macOS to create a EFI partition through erasing command or Disk Utility with GUID enabled. I've mentioned this issue a few pages back.
You can use "diskutil list" to check if a EFI partition was successfully created.

It's a 16GB Trashend USB stick, and I'm pretty sure it's partitioned with GUID scheme and the EFI partition is there (I used it to install Catalina 19H15 with DosDude1's patcher). EFI partition is not 256MB large, but I'm not aware how to resize it. This is the diskutil output:
Code:
/dev/disk2 (external, physical):

You might try it the hackintosh way, like this:
https://dortania.github.io/OpenCore-Install-Guide/extras/spoof.html
Or you could apply dosdude1's trick via OpenCore - that would then survive an NVRAM reset, as long as you boot into OpenCore first:
http://dosdude1.com/gpudisable/

I'd recommend the second approach.
Edit:
There already seems to be an OCLP issue that touches your problem:
https://github.com/dortania/OpenCore-Legacy-Patcher/issues/522
Edit 2:
But it doesn't explain how to add the dosdude patch using OpenCore.
Take a look here

or here

But is does not work, at least from what I understand reading through the posts.

Can you explain or send a link about this?
So you unfortunately can't do it using OC.

Thanks to both. If I can't sell the 2011 MacBook Pro as a replacement parts, sooner or later I'll try it. In past I had already disabled the GPU with DosDude's software method, but then I had to reset the PRAM, and I couldn't disable the GPU again because the display got worse.

So you cannot even boot into safe mode now?
In that case I think you would need a bootrom mod.

👀 The @jackluke tools are intended for use with unpatched ROM, non-Metal actual Macs. Let's get back on track. 🚧

The @jackluke APFS USB booter has succinct built-in instructions to build it. Failure means a USB disk issue or user error. Because your iMac has the stock (unpatched) bootROM, it is not capable of launching the macOSinstaller in any update. So, once the USB booter is built, correctly. . . . . Do this - Delete everything in the /Library/Updates ƒ, one more time. Open the Software Update C/P, then run CatalinaOTAswufix app by double-clicking on the folder icon (the app runs best from inside the home ƒ e.g. Desktop or Downloads ƒ), The app will open to two(2) options - select the Software Update fix, the D/L will start in the C/P - immediately apply the OTA update fix button, it may ask for p/w, the D/L will complete and the progress bar will run to about 15% and reboot, hold the option key and select the USB drive furthest to the right, the iMac will boot into a menu, MacOS installer will be one of the entries, once selected the installation will complete and restart <option> into Catalina Patcher v.1.4.4 (if accidentally booting into USB boot picker menu, the Catalina Patcher will be one of the selections, it will boot if selected), re-install recommended patches, Force Cache Rebuild to complete. If performed as documented within the apps this works every single time. ;) Run SilentKnight after the update is completed.

there
if there is any advice to give
from someone who reinstalled Catalina on their 2010 MacBook from BigSur (just Monday) that needed repair.
I reinstalled Snow leopard, (original usb drive)
ran 4 disk verifications and permissions where the repair finally worked.
then installed elcap from  site
then Catalina from dosdude with w/updated patch via usb drive.

this info might be useful to someone next week, year or maybe today.

I'd suggest you follow K two's suggestion first. Failing that, you can try OCLP to boot your mac. Make sure you use the latest nightly built TUI version. You will need to set SMBIOS to moderate and enable Catalina (in item 5 ->3&7) before building the OCLP (item 1) and write to EFI (item 2, select your USB stick -> EFI). Once you have a working OCLP USB, boot your mac holding the option key and select OCLP EFI (hold down the control key before clicking), then boot to dosdude1 Catalina. You should see OTA update in Software Update. Make sure the OCLP EFI is selected during rebooting for update installation.
If still not working, boot to OCLP EFI and install the stock Catalina and apply the post-install patch by rerunning the OCLP installation app and select item 3. Run CatalinaOTAswufix app if no software update showing up.... After successfully installed the update, you can roll back to dosdude1's Catalina if you like. After rolling back, boot again with OCLP EFI. You will be surprised to see OTA update showing up and will be successfully installed this time around. You can apply the dosdude1 patch again after that. This is a very convoluted process due to the lack of understanding for the root cause of the issue.

Just noticed the latest nightly built OCLP has added
  • Add AppleGVA patch set for HD3000 machines
    • Mainly applicable for iMac12,x and iGPU-only MacBooks

OK, thanks in advice. I guess my fault was to try to install OpenCoreAPFSloader3 using my MacBook Pro. Using iMac it installed on first try (to USB stick with DosDudes patched Catalina Installer). Let's go on...

OK, done, done, done... but:
IMG_20211007_083357.jpg
I can't see "MacOS installer".😟
I tried to start with option 1, 2, 5, 6... but wasn't able to start installer. The first option boots from internal drive, second from USB stick with DosDudes installer (19H15)... 5 and 6, don't know how to use it and if there is a possibility to boot the updater installer.
MacOS installer will be one of the entries, once selected the installation will complete and restart <option> into Catalina Patcher v.1.4.4 (if accidentally booting into USB boot picker menu, the Catalina Patcher will be one of the selections, it will boot if selected), re-install recommended patches, Force Cache Rebuild to complete. OK, far all the rest, I think I need the above lacking step... Thanks again in any case.

Both options in CatalinaOTAswufix app report success if working. If not, do over. Make certain the OTA update fix button is applied early-on in the D/L. Reminder: If whatever Mac in use can boot APFS native - The OC USB is not needed. The update should complete unattended.

Congrats on the iMac, btw. 🤠

CatalinaOTAswufix.app, DD1 Catalina Patcher, Open Canopy booter strikes, again. Latest Security Beta runs as intended. Also, two other Apple updates, then MRT took two strokes to update, followed by Validation Patch Update, rebuild kext cache, restart into Build 19H1511. No issues, so far.

You might take a look at this thread, there are at least three OpenCore based solutions available to install Catalina, Big Sur and Monterey on your iMacPro5,1 without any patching and complex solutions to upgrade. If you have metal GPU you will enjoy even full app functionality.
