Big Sur officially supports an Ivy Bridge Mac (Late 2013 Mac Pro). When contacted, Intel support stated Ivy Bridge CPUs will continue to receive microcode updates to patch security issues if necessary, which are provided to the OEM (Apple) for distribution. According to Intel, there are no known security holes in Ivy Bridge processors that affect computers running macOS.
That would seem to include the 2012 Mac Minis, which have been desupported anyway. Gotta make people buy a new one!
