Not sure I've understood correctly. You go via OCLP to boot an installed system, right? If so...
The same applies to all booting happening during an installation. So at that point, after you pressed to opt key, you need to select the OCLP EFI, not the MacOS Install. Then when the OCLP boot picker comes up, select the MacOS Install (which could be called Macintosh HD there). - In both cases, when selecting OCLP EFI from the Apple boot picker and the installer from the OCLP boot picker, it is good to press ctrl (the arrow under the icon will become circular) then click, so the selection will persist during the subsequent installation bootings.
What I don't understand is why the installation didn't proceed automatically after preparation, and you needed the opt key. In any case when using OCLP, it is good to make OCLP persist as the default boot option (with crtl-click in the Apple boot picker).
A word about patching: when booting macOS or the installer via OCLP, it is true that things are not patched on disk; but a lot is modified in memory. While with post-install volume patch (which you don't need if I understand correctly), some additional things are patched on disk.
