NordVPN (won't connect, tried to add VPN config profile to system but nothing happens)
I already had NordVPN installed before upgrading to Monterey. If it hasn't been discovered yet: in NordVPN's settings I changed the protocol from NordLynx, which doesn't work, to IKEv2, and the VPN connected again.

Can confirm that works, just tried it. It's a little tricky to find because the default is 'Use Recommended Protocol', just changed it to IKEv2 and it connects again...

Ok, I finally got it installed, configured and running.

All I had to do was reset the SMC, and then the PRAM, and it completed installing.

Some results based on running it for a day or so.
  1. The current version of Monterey doesn't cope with USB attachments very well, especially some hubs (which may included built-in hubs, like in my WD MyBook Duo). It works best when there are no USB thingies plugged into the back of my iMac. This meant digging out the original flatpak keyboard that came with the iMac, that I really hate so much...
  2. Security is ramped up a bit more. It really doesn't like running software from unidentified developers, and can respond with a Crash Error.
  3. Normal software like Firefox, Brave, Office, LibreOffice, WPS Office, Pages, TeXLive, Joplin, BBEdit all install ok and run.
  4. Again, I had to dequarantine LyX, even though the same version of LyX runs happily on Catalina and all versions of Big Sur up to 11.5.
  5. Fontbook wants to install fonts into /System/Library/Fonts, but it can't because it is locked. Fonts have to be manually installed into ~/Library/Fonts.
  6. Every time i reboot, it reset the brightness to the middle of the scale, and I like it a bit dimmer.

I haven't had an issue with 5 or 6 on your list. Fonts install just fine and my brightness stays where I set it when I restart. Also as far as 1 goes, I keep a Thunderbolt 3 drive plugged into my M1 MBP at all times and have zero issue on Beta 1. But be sure to report those issues to Apple using Feedback app.

I was seeing a performance issue with Safari displaying pages (literally taking 10's of seconds for any new page) when Private Relay was enabled. I discovered the problem went away if I enabled a VPN (PureVPN), suspected a ISP DNS problem but changing to another DNS server did nothing to help. What did get around the problem was disabling AdGuard before starting Safari, now performance is normal with or without a VPN enabled.

Switched to using "AdBlock for Safari" and all is good, performance normal and ads blocked!

MAU is awful, which is why I switched to the App Store versions of Office Apps and now that Edge updates without MAU I've completely removed it now
Only drawback to the App Store version is I don't think you can run an Insider version (unless there's a way that I don't know about).

Plex Server has been a bit flakey on my Mac mini , requiring reboots when using as server keeps closing when not in use and will not open just giving crash errors.

5. Mine seems to put them in the right place, but refuses to install any system wide fonts

--EDIT--Never mind, had to copy them manually to /Library/Fonts

@vbctv You list Mamp as working and I can run it too but apache won't start. Can you confirm if apache is starting for you?

1Password 6 (v. 6.8.9) doesn't work for me in beta 2. I get a Problem Report popup, "1Password 6 unexpectedly quit."

I used AppCleaner and deleted everything except the application and was able to get to selecting a vault. When I selected a local Dropbox vault, it crashed again.

i thought 1password 7 was required for big sur (etc)? you could confirm with the developer, and update to 7 if that would work (it's still the non-subscription model)...
