I game a lot on mine (Far Cry 3, Alien Isolation, Bioshock infinite... I've never seen more than 8-10GB of RAM occupied under my Windows session...
You need more than 16GB if you are editing HD/4k videos or very huge photos, if you use virtual machines... But for internet, gaming, casual photo editing, 16GB is enough.
Just think that if you buy 2x4GB, the day you will need more RAM, you will need to sell one pair of 4GB modules...

Am I reading it wrong? So we might find out that that iMac 5k might support up to 2400mhz automatically since the CPUs do

The crucial kit you posted is only 1600 MHz. Will this be an issue? Doesn't it need to be 1866? If so is there a better crucial kit at 1866mhz but not the ballistix?

As long as the ram is 1866 or 1867 you can mix the ram with the current ram the comes in your iMac. This information come straight from a person at Apple that I spoke to. So you could do 2 4GB ram sticks and two 8gb ram sticks. Don't mix the ram in different slots keep it in pairs.
 
Anyone notice that the ram EVERYWHERE is slowly selling out or on back order ? I tried picking some up on Amazon and it's back ordered or the price has been bumped up.

The market wasn't great (at least at Amazon) prior the launch, but yet it got worse.
