Yeah I get that the Souls games and this game doesn't quite do it for many people. To be honest, I loved Demon's Souls, LOVED Dark Souls and really liked Dark Souls II (even tho it was a step down imo) but with Bloodborne I have to say that I didn't really liked it as much as I did the previous games. With the other games I couldn't stop playing them even after ending them. I would jump straight into New Game Plus and even start again to try out different builds.
But Bloodborne? Ehh...it didn't hook me the same way the other games did and right now I don't feel like going through New Game Plus or starting a new build. It is really lacking in terms of armours and weapons variety which limits severely the possible builds you can play with. It is also very samey as far as the atmosphere goes, everything is the same tone, a cool tone for sure, but it gets old after a while.
In terms of mechanics it felt like a step backwards in many ways specially from Dark Souls and as far as giving you a sense of purpose or goal, it really fell short compared to Demon's and Dark Souls. Neither of those games held your hand or spoond fed you anything but at least gave you enough information to ground you and give you a sense of what you needed to do and why, which is something that makes you care about the world you are in. With Bloodborne, as much as I liked the art direction and the level design, the lack of information and fleshing out of the lore just hindered my immersion in the world and a lot of the time it just felt disorienting and random.

Managed to get past the machine gun guy, and land some ways down (thought I could make the jump, but wasn't sure) then worked my way back up. Managed to get to the tower where the machine gun guy is, and killed him the second try-the game definitely rewards you for being aggressive!
Nice, yeah being aggressive can help sometimes in this game, it is rather different than with the previous games where hiding behind the shield was often the go to strategy. I ended up pushing him off the tower so he died of the fall. That bit of avoiding his machine gun in Old Yharnam was rather fun.
Any tips that you have for starting class/weapons? And should you simply upgrade your first choice of weapon, or hold out for what you find later?
You know what? Unlike with the previous Souls games, I never felt the need to change the weapons. I did upgrade it up to +9 while also adding fortification gems that boosted physical attack stat but I found that I was strong enough to face everything just by leveling up (allocating enough points to Strength and Health primarily while throwing a share to Skill and Stamina too). With regards to the armour I found that most of the new sets I came across didn't really offer much of an improvement as far as brute stats goes. Sure some had higher poison, frenzy resistance or something like that but no armour feel tot me like a definite improvement.
