Yea, I hear ya. I don't care much about photography either. With the exception of maybe night mode, which I guess I wouldn't mind having, the marginal returns have gotten pretty small ever since the 6 or 7. I've got an original SE whose pictures look phenomenal when the light is good.
What probably means the most to me is something that no one else seems to care about: speed of text entry. That's why my primary phone is a 7 Plus. With the wide keyboard I can type pretty quickly with both thumbs, and I rely less on autocorrect. Weight matters too, and I'm happy to see the 12 weighs a lot less than the 11...but I would be giving up a little width, which means a slightly smaller keyboard. I think I would actually love a shorter (to reduce the weight) and slightly wider (to enlarge the keyboard) phone, especially since I don't like watching videos. Mostly I'm reading stuff, writing stuff, or listening to podcasts. I have a hard time believing there are so many more people who obsess over photo detail than are interested in a better phone to read and write on.
