The Anthropocene
I’ve made own Kombucha fairly consistent ~15 latest yrs except that it have gone downhill the latest 2 yrs, so it didn’t taste so good. I didn’t took care of my scoby’s enough to produce the best good stuff.
Requires love :)
So I decided to start up fresh with new Scoby’s recently.
A few more weeks and I’ll have more of this delicious and healthy stuff to drink, again.
Very low alcohol content, even lower then cider. But a great boost for immune system.
This is a project I’m considering taking up. My experiments with coffee roasting have panned out well over the last several years. Beer, cider, and kombucha brewing are next up on the list.

I haven’t had a Rochefort 10 for a long time. So, I picked up six yesterday afternoon. Four disappeared. Back to Total Wine to buy what’s left on their shelf.

In a coffee shop.
An extremely good sour fruit beer from the always excellent Buxton Brewery called Red Wolf. The notes describe it as having the "sour flavours of a Flanders style red ale" adding that this "small batch, barrel-aged sour fruit beer is brewed with raspberries, cherries and blackcurrants."

Total Wine only had three Rochefort 10’s left. Ordered two cases.

Experiment on the Egg. Lol! No Ambien was harmed in this hideous “thing”.

Not even close to that healthy. Bacon wrapped around breakfast sausage wrapped around cheese, onion, jalapeños, basil, and spinach. Good lord.
It's got onions, peppers, basil, and spinach in it. Healthy enough. Ground my own breakfast sausage a few years ago. Rewarding experience but time consuming. I get it from my butchers now. You pick the meat, the spices and wait a few days. They get a lot of custom orders. They can even encase it for you.

I think I'll try your creation for the WC. Did you have to overwork the sausage so the cheese wouldn't seep out?

I don’t recall making sausage except when working in a packing house. I have made horseradish...never again. The cheese stayed nicely inside.

Longshot to ever try this again. My god, this was really something special. Like a punch in the face good, though that's never actually a good thing. Unless you're Pierce Morgan or Roger Stone.

Did you mean a meat packing plant yesterdayt? Those are common in the midwest, right? I use a food processor with the blades and plates. I like buying sausages that were made that day or custom order because I can get exactly how much I want. As you'll know, there's a lot of nice quality sausage brands (organic and small farm) or whatever but they always pack way more. And if you find nice rolls or buns (?), they're always at odd with each other. I can buy however many I want and go to the bakery and get their buns or rolls. Nothing extra.

Yes. I quit college and worked in a well known midwestern packing house (pork side, never worked the beef side) for a few years. I primarily worked in ham boning (deboning hams and picnics) but did short stints in the kill and small meats.

Right. That's what I thought but I then thought you made a joke based on where you worked later. You've had a fairly varied and interesting life.

Thank you. Funny though, several years ago when our marriage was breaking up my therapist said I had an interesting life too. Lol
