Kind of sad this thread has devolved into screenshot posting... Anyways, likely my last post for this thread. I returned my iPhone 12 Mini and picked up a iPhone 12 instead. The screen is still more yellow compared to other Apple devices, but it's a huge improvement in my book. Why? Take a look at my DisplayCal results below. Again, I'm not an expert so take my results with a bucket of salt.

On the Mini, the display is showing a minor green bias, which is probably why everything looked so yellow. But take a look at the gamma. It should be as close to 2.2 as possible, but it's all over the place. A bad display in my book.

My iPhone 12. It no longer has a green bias, and the gamma is far closer to 2.2. Of course it's not perfect but it's far better than before. Looking an image of pure white clouds no longer look like piss clouds. The white point is only a slight improvement (6480k vs 6410k) but I'm shocked how different the displays are. And I'm convinced Apple is aiming for 6500k with the iPhone 12s, so there's no way it'll match other Apple LCD devices which usually sit in the 6700-6800k range. Looking for a display like that is probably searching for an unicorn at this point. I'm satisfied with my display now, so I'm moving on.
