Ok that's worrying. I have the Payback Amex. Anyone here with a Payback Amex get that email?

I just checked whatever email settings they have, and for me everything was switched to off, no wonder that I didn't get anything. They have a bunch of options you can select. Maybe your settings don't cover the ApplePay mail?

I cannot really help, but at my platinum I had everything disabled and on my gold this was enabled:

no. if the store doesn't accept amex, it wont work with an amex in ap. store has to accept amex.

So keep finger crossed for Monday. It would be the real first concrete launch date with hints on Twitter and other social medias

that's correct. amex is everywhere in the world not that wide spreaded. but it's getting more and more.

nope. Amex via Apple Pay is only accepted in places where Amex itself is accpted

Not a great option then.
I'm paying nearly everywhere with my amex. except bakery (only GiroCard, MasterCard and Visa) and some Edeka.

gas stations, Rewe, Real, Aldi, BK, denn's, Metro, Müller, Rossmann, ... no problem with amex.

EDIT: Interesting, on the Wirecard server it is tagged with "DE_AT" and also shows it was created in June 2018. Underlines the fact that delays were definitely a factor in the DE launch.

boon has always been available on Android in both Germany and Austria. The TOS don't even mention Apple Pay, so I guess they have always been there for the Android Users.
