I’m guessing at this point they’re just planning on releasing 14.2 with the horrible Messages keyboard lag and the missing share sheet contacts bug.

Mind you, might not, not like it wouldn't be the first time they release with some bugs outstanding, then mop up in a x.x.1 release, once they get the last of the new devices out & can focus on bugs.
Also, those 2 issues seem to only be affecting a small % of the users, so maybe it's not high up on their list.

As long as Apple releases a profile/build for it, yes. In recent years they have, I believe twice now the day after new phones were out and another time the day before.Couldn't you just add the 14.2 beta to the new phone? Or has apple not built it yet for the new devices?

I don’t think so 14.1 only just came out, my guess is they will launch for the 12 pro max in a few weeksI think we might see ios 14.2 GM as early as tomorrow or any day within the week. We might also see iOS 14.2 Final as early as tomorrow or any day now. Expect the unexpected when it comes to apple.

Like i said, expect the unexpected. it may or it may not. if we will follow the timings and the features "coming later this year" in the apple website, iOS 14.3 needs to start testing for it to be released before the holiday in December.

iOS 14.3 beta **may** start testing as early next week with iOS 14.2 GM this week wth release next week or no iOS 14.2 GM and just release it this week. anything can happen especially how apple just surprises us.

2. I’m also sure that is already in, it just got disabled in the 14.0 beta period, from what I remember, so they just have to re-enable it, so won’t need much.

4. Not 100% sure that needs a point release, as it’s just an App Store subscription, it won’t be something we would see in a beta tho.
5. All releases include bug fixes, and there is possibly going to be a 14.2.1 with some bug fixes. iPhone 12 Pro Max and Mini will most likely come with 14.2 on it, as it just makes sense.

Because I am 100% sure during the last beta of ios 14.0 as i was looking for them, they were removed thats why in the Apple Page for ios 14, it is still mentioned as "will be available in the software update".i believe it will be a big change especially for developers as they need to update their app details to have those.
For Apple One, especially Apple Fitness, the framework or the code needs to be in iOS 14 for it to work. It's not true, that its because "it's just a subscription" it does not need a point release, remember Apple Music was introduced iOS 8.4 and Apple News + in ios 12.2?

Anyway, these are just my speculations.
As I said, number 2 was in the early beta's and the toggle was disabled in the beta that came out the week of the announcement it was being delayed after there was a lot of people kicking off (I'll find the details in a bit). The functionality is in there, just that it's not enabled, therefore it's not much for them to just re-enable the toggle.
My apologies about the Camera for App Clips, I was not aware that wasn't in there already, but that wouldn't be much of a thing to implement, not sure it's in 14.2, so probably 14.3.
Regarding Apple One, Apple One itself is a subscription tier, along the lines of the iCloud subscriptions, etc.
Apple Fitness+ is not the same as Apple One. You never stated Apple Fitness+ in your original post, if you had said that, I would have pointed out that Apple News+ wasn't in the beta for 13.2 though.
