For iOS 15.1, do you recommend downloading it via Wi-Fi from the iPhone or via cable from the Mac?

Is IPSW out ?
Yep:

Is this true? I feel like maybe it's better for itunes to install the entire firmware from the ground up instead of in patches like OTA, no?
The firmware/system is kept on its own system partition, separate from user data - OTA and IPSW will give you exactly the same system partition afterwards, so it really doesn't make a difference. The OTA uses error-checking so can detect if it hasn't applied properly.

For me, I had click Add to Wallet from within the App of my provider rather than add it from within Wallet.
Regarding covid wallet card, just updated to 15.1 ota and the add to wallet option was there in health. it wasn't there yesterday, but now shows all 3 pokes.

It’s never been longer than 20 mins for me with finder. If that.
I’m probably exaggerating. Nonetheless it takes way too long during that portion of the update. The actual install doesn’t bother me.
What is it doing during the “preparing update” stage that takes twice as long as the actual installation?

It all depends on where you got the Covid Vac. Not all states or providers in those states use the same reporting program. There is not a uniform program and only 1 works with the iPhone/Health App. Only about 4-5 states in the US if I remember correctly.
