Yes, I did try that. But I still needed to run the post Install | rebuilt Caches in order boot to the selected OS.

This is normal. Clearly you did not applied the APFS ROM PATCH. Some time ago dosdude1 has implemented a custom boot selector but I am not sure if that project is still current.
Run the System Preferences main executable in Terminal so you can capture any messages from it. Also have a Console window open. My Trackpad prefpane opens fine, so I can't troubleshoot, but that might give us a hint of what is happening.The 10.14.6 release has clarified that a non-loaded IOBluetoothUSBDFU kext should have no relationship to the broken Trackpad in patched Catalina. The patched 10.14.6 has a functional Trackpad system preference panel but the IOBluetoothUSBDFU kext now doesn't load (unlike in patched 10.14.5 where it did).
Update: It turns out that 10.14.6 now is loading the IOBluetoothUSBDFU. It is unclear if launching the Trackpad system preference panel caused that. If so, I assume I should find some symbols from IOBluetoothUSBDFU in the Trackpad system preference panel binary.
Update2: Okay, we can really rule out IOBluetoothUSBDFU. I was able to use...
sudo kextutil /System/Library/Extensions/IOBluetoothFamily.kext/Contents/PlugIns/IOBluetoothUSBDFU.kext
under patched DP4 to force it to load and that still leaves Trackpad failing to launch with the 'Preference Error Could not load Trackpad preference pane.'.
I have an issue going on that I don't understand and maybe someone can either tell me what is going on and/or suggest a solution. I have a MacPro 5,1 that is running separate installations of Mojave and Catalina (separate SSDs not just separate partitions on the same drive). Catalina is running perfectly after installation with dosdudes patcher. However, I have one, singular 32-bit application that has not yet been updated to 64-bit that I need to run about once a day. Currently I restart into Mojave and do what needs to be done and then, when finished, restart back into Catalina. However, upon restarting into Catalina, sound and wifi are gone, requiring that the post-install patches be re-applied. Not all that big of a deal, just a hassle and seemingly unnecessary. Comments? Solutions?
I've not seen anything like that on a MacPro 3,1 with patched Mojave on an SSD and patched Catalina on a hard drive. Are you using a usb installer created with the 1.0b11 Catalina Patcher? That was the first release that made the forced rebuilding of the cache the default. This was required to address the failure of reinstallations of Catalina over itself from automatically rebuilding the cache (apparently due to a stale copy).
I have this Unsupported (for both Mojave and Catalina) MacbookPro5,3.
The 2 OSs were installed on an internal SSD both formatted APFS using dosdude1's respective patchers - v1.3.3 for Mojave, 1.0b11 for Catalina.
I can boot up to both but here's the weird situation.
In order to boot on either, I have to boot up first to the respective patcher, run post install and rebuild cache and then reboots fine to the specific OS. I cannot just go to SystemPreferences | Startup to select the SSD partition to boot to.
In other words, in order to switch default boots, I have to run the patcher steps above.
Hope that my explanation is clear. Thanks for any input on why this happens.
P.S. If I go to Restart | Option key pressed, I see the "EFI" as the SSD drive designation.
A follow-up on this.
When I do a restart | option-key press, I only see a single internal SSD partition boot to select (although I have 2 boot partitions). And it indicates "EFI boot" as the name. Weird. Any way this could be fixed? i.e. to show 2 boot selections?

1. Make sure your using the latest patcher which is b11. 2 . If you are using wifi make sure you are connected to the one that is from your ISP. 3. If that fails try rebooting your router. 4. @TimothyR734 I can only use wifi (I have Xfinity I can usually get 100 mbps) I do not have an ethernet and I am using the latest patcher because I downloaded it today. What do you mean make sure I am connected to ISP 3? This is also my only mac all my other computers are windows although I do have an iPhone and multiple ipads I don't know if that will help or not. System date and time is correct and there is enough storage on the mac. I have macos Mojave installed on the mac right now, I downloaded and installed it 3 or four months ago with no problem with your macos Mojave patcher. I've just released a major update to Catalina Patcher (along with a completely redesigned webpage as of a few days ago)! With this release, I have finally brought Catalina Patcher out of beta stages! All installation options are now fully implemented, finally bringing the program up to its full intended level of functionality. I have also implemented a logging feature, to more easily debug issues that may occur.
Please note, though, that at this time, the in-place installation method will only work on machines that have native APFS BootROM support. The external installer volume and ISO image methods will work on systems that do not have APFS BootROM support.
