I read about Opencore, so this OpenCore Legacy Patcher is just a shortcut, right? How can we be sure these developments (OpenCore & Legacy Patcher) do not carry some dirty trojans stealing our data?

This particular patcher here used on this thread was never open source unless the programmer decided to focus on other things, it had a tool to check online for upgrades and you all happily pressed ok whenever it came up with a message?
OpenCore and OCLP are both open source, the intention was to replace the closed source approach Clover (only usable with Hackintosh), you can download and compile it yourself. You can cross check each kernel extension included yourself, but yes, it is a ton of code.
The Trojan horse has already been placed by the U.S. government agency called NSA on your system, getting devices with Alexa and Siri functionality already got us far behind what the STASI or Aldous Huxley or George Orwell could ever imagine. All our devices are connected 24/7 to a big network which most of us do not really understand and certainly do not control.
You opened the can of worms - or to speak with a more colourful picture the box of pandora - already wide! And there is no way back.
